comment fron a thracian chef: i agree with you on the onions. but some tomato is nessesary for stifado. i also wouldn’t use oregano in it. Alla peri orekseos kolokithopita!!

Νομίζω ότι θα φάει τα λόγια μου εδώ για τις ντομάτες, αφού σχεδόν όλες τις συνταγές που μπορεί να έρθει σε απευθείας σύνδεση με την – στα αγγλικά και ελληνικά – έχουν ντομάτες! Αυτό σημαίνει ότι υπάρχουν σίγουρα περιφερειακές διαφορές ως προς το θέμα αυτό, δεδομένου ότι κάθε Στιφάδο δεν είχα ντομάτες. “Μου” είναι η περιοχή των νησιών κοντά στην Τουρκία από τον τρόπο Weise.Denke πάρει ακόμα το χρώμα πρέπει να είναι τουλάχιστον εν μέρει, από την ίδια την χρυσή κρεμμύδι! Tomato is always added in the traditional recipe. thats essentially what makes it a stifado,which means “stewed meat” coming from Italian “stufatto”. If it was just meat and oinions and spices it would be a “tigania”.
Every variation of stifado from xtapodi to kouneli to vodino has tomato in it.
Use of cloves and cinnamon is extremley cooking in southern and western Greek stewed dishes such as stifado, daphne also.

Giorgo, I’m sure what you’re making in this video is tasty, but it’s NOT a traditional stifado! Is this a regional variation?
Those onions need to be browned a nice, deep, almost-burned brown before being combined with the (separately-browned) meat, then some wine should be added and NEVER tomato! Daphne’s the traditional spice as well (although your spices look nice and different). Try it my way and I’ll try it yours?

Thanks for your comment. There are a number of regional variations on the recipe, this is the most basic version and is a tried and true meal. Of course, everyone has a spin of their own to add and that’s what makes cooking such an enjoyable pursuit for so many people! take care.
